Winter Hash with Turkey Sausage

Serves 4


  • 1/4 cup extra virgin olive oil or coconut oil
  • 1 small onion, minced
  • 6 cups grated winter vegetables
  • 4 turkey sausages
  • 1 tsp. sea salt
  • Freshly ground black pepper


If you are using potatoes you will need to first grate them and then place into a large bowl filled with cold water. Stir around to loosen the starches. Strain potatoes through a clean towel, squeezing out all the moisture. Place in a large bowl, and then add the other grated winter vegetables. If using winter squash be sure to peel it first. Cook turkey sausages according to instructions on the package. Heat a large skillet over medium heat. Using an 11 or 12-inch cast iron skillet is the best type for this recipe. Add part of the oil and onion; sauté for a minute. Add the grated vegetables and sauté for a few minutes and adding the remaining oil as needed. Cover the skillet and cook for 10 minutes. Uncover and stir after 5 minutes, then uncover and sauté until cooked through. This is usually about 15 minutes. Add sea salt and black pepper and sauté a little longer.
