Turkey Spaghetti with Zucchini Noodles

Serves 4


Zucchini noodles

  • 3 large zucchini, spiralized
  • 2 tbs. of extra-virgin extra-virgin olive oil

Meat Mushroom Tomato Sauce

  • 1 tbs. of extra-virgin extra-virgin olive oil
  • 1 cup of red onions, chopped
  • 2 cloves garlic, minced
  • 4 cups button mushrooms, sliced
  • 1 lbs. of ground turkey
  • 2-28 oz. cans of whole plum tomatoes (with sauce)
  • 2 tbs. of tomato paste
  • 1 cup of fresh basil, chopped
  • sea salt and pepper

Run 3 large zucchini’s through a spiralizer to create noodles (if don’t have a spiralizer can use a grater). Set aside. Heat a large saucepan to medium-high heat. Add 2 tbs. olive oil to pan, and sauté onions for 30 seconds, and then add mushrooms. Cook until mushrooms are browned, approximately 4-5 minutes. Add whole plum tomatoes and 2 tbs. of tomato paste; break up the tomatoes with a spoon in the pot. Season to taste with salt and pepper. Simmer sauce for 10 minutes. Meanwhile, heat a large skillet to medium-high heat. Add 2 tbs. of olive oil. Add the zucchini noodles immediately and flash sauté them for 2-3 minutes, stirring the entire time. Remove from pan and let sit. Drain any excess water from the noodles. Finish off the meat mushroom sauce with freshly chopped basil. Serve zucchini noodles with meat mushroom tomato sauce.
