Swiss Chard and Chicken with Spicy Nut Sauce

Serves 4 – 6

Ingredients:

  • 6 – 8 cups swiss chard, finely chopped
  • 3 chicken breasts, cut into chunks
  • 1 tbsp. cold pressed coconut oil
  • 1 large yellow onion, minced
  • 1 tsp. ginger, freshly grated
  • 1/2 tsp. cumin
  • 1/4 tsp. cayenne
  • 1/2 tsp. coriander
  • 1 and 1/2 tsp. curry powder
  • 1/5 cup organic almond or cashew butter
  • 3/4 – 1 cup coconut milk
  • 1 – 2 tbsp. tamari
  • 1 tbsp. brown rice vinegar

Heat coconut oil in  a small pan over medium heat.  Once heated, add onions, garlic, and ginger.  Sauté for about 5 mins.  Add spices, stirring often.  Then add almond butter, water tamari, and brown rice vinegar. Whisk together and then add the chicken.  Bring to a boil, and then simmer. Place Swiss chard in steamer and steam for 3-4 minutes.
