- 4 tbs. extra-virgin olive oil divided
- 5 cups peeled, diced sweet potatoes
- 2 cloves garlic, minced
- 3 tbs. minced shallots
- 2 cups diced ham
- 2 tsp. chopped thyme
- 2 tsp. chopped sage
- sea salt and black pepper to taste.
Heat 3 tbs. of oil in a large skillet over medium-high heat or in a large skillet. Add the sweet potatoes and cook, stirring occasionally, for 10 minutes until browned on all sides. Add the remaining olive oil, garlic, shallots and ham, cook an additional 3 minutes. Stir in the thyme, sage and pepper, serve immediately.
