Spice, Fruit and Nut Cream of Rice

Serves 4


  • 1 cup of long grain brown rice
  • 3-4 cups of non-dairy milk (almond, coconut etc.)
  • 1/2 tsp. sea salt
  • Sliced almonds
  • 1 tsp. almond extract
  • Chopped pecans
  • Cinnamon or cardamom
  • Frozen mixed berries

Use a clean coffee grinder and grind long grain brown rice into a fine meal. Place non-dairy milk into a saucepan using medium heat and stirring until warm. Pour in the ground rice and whisk continuously to prevent clumping. Turn heat up and bring to a boil continuously stirring. Once the mix has come to a boil reduce heat to low. Cover and simmer for 5-10 minutes continuously stirring, add water if necessary depending on the thickness. Lightly heat berries in a separate pot on the stove. Cook rice cereal for a few more minutes and then take off heat. The mixture will thicken as it cools down. Serve in a bowl and add toppings in your desired amounts.
