Slow Cooker Chicken Stew

Serves 4-6

Ingredients:

  • 1 cup diced shallots
  • 3 stalks celery, diced
  • 4 carrots, peeled and diced
  • 1.5 lbs. boneless chicken breasts, cut into chunks
  • 2 cups diced tomatoes
  • 1 cup filtered water
  • 1/4 – 1/2 cup apple cider vinegar
  • 1/4 cup extra virgin olive oil
  • 1 tbsp. Italian Seasoning
  • 1 – 2 tbsp. sea salt
  • Freshly ground black pepper

Add all ingredients to your slow cooker and cook on high for 4 to 5 hours or on low for 6 to 8 hours. If you do not have a slow cooker, place all ingredients into a covered casserole dish and bake in the oven for about 2.5 hours at 300 degrees F.
