Roasted Golden Beets and Grilled Lamb

Serves 4


  • 4 medium golden beets, ends trimmed
  • 2 tbsp. coconut oil or extra virgin olive oil
  • Desired number of lamb chops
  • Coriander to taste
  • 1/4 tsp. sea salt
  • Freshly ground black pepper

Preheat oven to 350-degree F. Place the beets into a small baking sheet with a lid. Cover and bake for 2 hours. Once cooled enough to touch, remove the skins. They should slip right off, if not, use a small paring knife to remove them. Turn the oven temperature up to 400-degree F. Cut the beets into 1-inch cubes. Place into preferably a rectangular glass-baking dish. Mix with the olive oil, salt and pepper. Bake for approximately 40 to 45 minutes, turning once. Be cautious not to overcook them as they can burn quite easily. Heat grill to high; lightly oil grates. Place lamb chops on baking sheet, rub both sides with coriander; season with salt and pepper. Place chops on grill. Cook, turning once, until chops are browned and cooked to desired amount.
