Quinoa Porridge

Serves 4


  • 1.25 cup quinoa, rinsed
  • 1.25 cup water
  • 1 apple, cored and sliced
  • 1 cup of almond milk
  • 1 tsp. pure vanilla
  • 1/2 tsp. ground cinnamon
  • 4 cardamom pods
  • 1 cup frozen local, organic, blueberries
  • Almonds or walnuts, chopped (or seeds of choice)

In a small-medium sized pot, combine quinoa, water, apple slices, almond milk, vanilla, cinnamon, and cardamom pods.  Cover pot and bring to a boil before reducing to a simmer for 10 minutes.  Add the blueberries and let simmer for approximately 5 additional minutes or until most liquid is absorbed.  Turn off heat.  If thinner or “creamier” consistency is desired, add additional milk.  Serve in individual sized bowls and top with nuts or seeds or choice.
