Quinoa Currant Porridge


Ingredients:

  • 1 cup uncooked quinoa, rinsed
  • 4 cups milk or nut milk (ie. almond or coconut)
  • 1/4 cup currants
  • 1 tsp. cinnamon
  • Pinch sea salt

Garnish:

  • Chopped nuts
  • Hemp seeds

 

Rinse the quinoa well and drain through a fine mesh strainer. Place the quinoa, non-dairy milk, currants, cinnamon, and salt into a 2-quart pot. Bring to a boil, reduce heat to medium-low, cover, and simmer for 20 to 25 min. Sprinkle each bowl with chopped nuts or raw hemp seeds.
