Pumpkin Spiced Oatmeal

Serves 4


  • 3 cups water
  • 1 cup almond milk
  • 1 cup steel cut oats
  • pinch of sea salt
  • 1 tsp. vanilla
  • 2 tsp. pumpkin pie spice
  • ¼ cup pumpkin puree
  • raisins, dried cranberries, or dried cherries
  • pecans or almonds

Combine water and milk in a large pot over medium-high heat and bring to a boil. Add oats and salt. Stir. Bring to a boil, reduce heat to medium-low and cook uncovered for 20-30 minutes. Stir occasionally. Once thickened, add vanilla, pumpkin pie spice, pumpkin puree and dried fruits. Stir to combine. Serve with pecans or almonds. Store extra in an airtight container in the fridge, adding additional almond milk when reheating.
