Poached Halibut with Green Beans

Serves 4

Halibut Ingredients:

  • 1-2 cloves of garlic, minced
  • 1 tbsp. Extra-virgin olive oil
  • 1 small bunch of fresh chives
  • 3-4 tomatoes, chopped in 1/2″ cubes
  • 3 cups of swiss chard, cut lengthwise into long strips
  • 1/2 cup fresh basil leaves, torn
  • 2 fillets of fresh halibut

Green Bean Ingredients:

  • 3/4 lbs. green beans, washed and trimmed
  • 1 tbsp. Extra-virgin olive oil
  • 1 tsp. lemon juice
  • 1/2 tsp. lemon zest
  • 1/3 cup hazelnuts, chopped
  • Sea salt and black pepper to taste

Halibut:  In a large skillet, heat oil oil over medium heat. Sauté garlic until soft and aromatic. Add tomatoes, stirring frequently with garlic for 1 minute. Add swiss chard and basil, allowing to wilt in pan stirring occasional. Move mixture to side of pan, allowing space to cook the halibut in the pan with the juices created by the other ingredients. Simmer for a few minutes, flip and continue cooking until fillets are white and flaky but not dry. Add sea salt and pepper to taste. Serve fish on a plate with a portion of the vegetable mixture, the green beans as described below and an optional side of brown rice or quinoa if desired.

Green Beans:  Prepare steamer. Once water is boiling, place washed and trimmed green beans into steamer for approximately 5-8 minutes, or until softened but still slightly crunchy in the center. Remove from heat and toss in a bowl with olive oil, lemon juice, lemon zest, and salt and pepper. Place in serving dish and top with chopped hazelnuts before serving.
