Peaches and Cinnamon Quinoa Breakfast Bowl

Serves 4


  • 1 cup uncooked quinoa
  • 2 cup almond milk
  • 2 cinnamon sticks
  • pinch of sea salt
  • piece of a vanilla bean


  • toasted sliced almonds
  • toasted coconut flakes
  • peaches
  • raspberries
  • more spices to taste (cinnamon, nutmeg)

Rinse and drain the quinoa. Place it in a small saucepan and add the almond milk, 1-2 cinnamon sticks, and a pinch of sea salt. Bring to a boil, cover and reduce heat to low for 15 minutes. After 15 minutes, remove pan from heat and let quinoa sit until the almond milk is absorbed and the quinoa is cooked. Taste and add additional spices if needed. Scoop the quinoa into two bowls and top with toasted almonds, toasted coconut, and fruit. Add almond milk poured on top if would like a little more liquid. Serve and enjoy.
