Lamb Meatloaf

Serves 4

Ingredients:

  • 1 lb. organic lamb
  • 1/4 cup non-dairy milk (almond, coconut etc.)
  • 1 organic egg
  • 1/2 cup finely chopped onion
  • 1/2 cup grated carrots
  • 1/2 cup minced parsley
  • 1/2 cup finely chopped celery
  • 1/2 – 1 and 1/2 tsp. onion powder
  • 4 cloves garlic, finely chopped
  • 1/2 – 1 and 1/2 tsp. dried sage
  • 1/2 tsp. sea salt
  • 1/4 – 1/2 tsp. black pepper

Preheat oven to 350° F. Mix all ingredients in a bowl, making sure to blend well, (easiest way is to use your hands. Pat mixture into a greased 9×5 inch loaf pan. Bake for 1.5 hours. Drain juices and scrap fat off the top. Serve by the slice.
