- 1 bunch kale, rinsed
- 1/2 green apple, diced
- 1 cup walnuts
- 6 tbsp. extra virgin olive oil
- ½ cup apple cider vinegar
- 1 clove garlic
- 1/2 tsp. sea salt
Remove the thick stem from the middle of each kale leaf. If your kale is young and tender you don’t need to do this step. Then chop or tear into bite-sized pieces. Toss kale in a medium-sized bowl with the diced apple if you are serving this salad right away after preparing it then mix in the candied walnuts now. If not, wait until ready to serve to add the walnuts. Place all ingredients for the dressing into a blender and blend until smooth. Pour dressing over kale and apples. Toss together.
