Herb Roasted Halibut

Serves 4


  • 1.5 – 2 lbs. fresh halibut filets
  • 1/4 tsp. sea salt
  • Freshly ground black pepper
  • 2 tbsp. extra virgin olive oil

Herb Topping:

  • 1/2 cup packed fresh basil
  • 1/2 cup packed fresh chives
  • 2 – 3 tbsp. fresh oregano leaves
  • 1 tbsp. thyme leaves
  • 3 cloves garlic, peeled
  • Zest from 1/2 of a lemon

Preheat oven to 400 degrees F. Rinse and pat dry the fish. Place into a rectangular baking dish, skin side down. Sprinkle with sea salt and freshly ground black pepper. Drizzle with olive oil. Place all topping ingredients into a mini food processor and process until minced. You can also place all ingredients onto a wooden cutting board and mince using a large, sharp knife. Using your fingers, rub the herb topping evenly over the top of the fish. Place in the oven and roast for 10 min per inch of fish thickness. It doesn’t take long to cook, usually about 15 min. The fish will continue to cook after it comes out of the oven so best to take it out when it’s a little undercooked.
