Heirloom Tomato and Sardine Salad

Serves 2


  • 2 4oz cans sardines, drained
  • Sea salt and fresh cracked pepper
  • 2 tbsp. capers, rinsed and drained
  • 1/4 cup diced red onion
  • 1/4 cup lemon juice, fresh squeezed
  • 2 tbsp. olive oil
  • 4 cups mixed summer greens
  • 1 cup heirloom tomatoes, diced
  • 1/4 cup fresh parsley, chopped finely

Empty sardines into a bowl and mash with a fork. Add to it, the salt, pepper, capers, red onion, olives, lemon juice and olive oil. On two plates, arrange the seasonal mixed greens and tomatoes. Then scoop the salad mixture on top and finish with some parsley.
