Healing Quinoa Cabbage Soup

Serves 4


  • 2  tbsp. extra virgin olive oil
  • 1  large sweet onion, cut into crescent moons
  • 2 cloves garlic, crushed
  • 1  tsp. grated fresh ginger
  • 3 large carrots
  • 5 cups filtered water
  • 2  tsp. sea salt
  • 1.5 cups cooked quinoa
  • 2  cups sliced savoy cabbage
  • 1/4 cup chopped cilantro
  • Freshly ground black pepper to taste

Heat a 6-quart pot over medium heat. Add the olive oil, and onions; sauté for approximately 10 to 15 minutes. Please don’t over cook the onions and make sure the heat isn’t too high causing the onions to brown. Lower the temperature if this is necessary. Add garlic, ginger and carrots; sauté 5 min more. Add water, sea salt, and cooked quinoa and simmer for approximately 10 to 15 minutes or until carrots reach desired softness. Add in cabbage and cook for a few minutes. Once the heat is turned off; add cilantro and freshly ground black pepper. Taste and adjust salt and seasonings if necessary. Stir together and serve.
