Curried Green Bean Ingredients:
- 3 tbsp. Extra-virgin olive oil
- 1 tsp. mustard seeds
- 4 cloves garlic, finely sliced
- 1/2 tsp. ground turmeric
- 1/8 ground red pepper
- 1/4 tsp. fresh cracked pepper
- 1 medium potato
- 4 cups green beans
- 8 lamb rib chops
- 2 tsp. ground coriander
- Sea salt and pepper to taste
Curried Green Beans: Heat oil in medium skillet over medium-high heat. Once oil is hot, add mustard seeds. When seeds begin to pop, add garlic and stir until golden brown. Add turmeric, ground red pepper, fresh cracked pepper and potato. Stir frequently for one minute before adding green beans. A small amount of water may need to be added. Cook until potatoes are tender, stirring occasionally. Sea salt to taste.
Lamb: Rub both sides of chops with coriander and season with salt and pepper. Place on heated grill and prepare to medium-rare by cooking about 3-4 minutes per side, flipping once, and cooking an additional 3-4 minutes.
