Grain-Free Pancakes

Serves 4 (Makes 8 to 10 pancakes)


  • 6 large organic eggs
  • 1/2 cup of unthawed frozen berries
  • 2 tbsp. melted coconut oil
  • 2 cups almond flour
  • 2 tbsp. coconut flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. sea salt
  • Coconut oil for cooking

Toppings: (optional)

  • 1 tbsp almond butter
  • Fresh berries or berry compote

Heat a 10 or 11 inch heavy bottomed skillet over low to medium-low heat. Place all ingredients into a blender or food processor and blend until smooth. Add a tsp. or two of coconut oil to the pan and pour batter by the 1/4 to 1/3 cup-full at a time on the hot skillet. Cook for approximately 90 sec on each side. Repeat this process with the remaining batter, adding a little coconut oil before cooking each pancake.
