Fresh Chia Pudding

Serves 4


  • 1 can coconut milk
  • 1 tsp. vanilla
  • ¼ cup chia seeds
  • 2 cups sliced strawberries
  • 2 cups blueberries
  • 2 cups raspberries

In a small bowl, stir together the coconut milk, vanilla, and chia seeds. Refrigerate for at least half hour (you can also do this the night before). Divide the strawberries between 4-6 glasses or bowls. Top with a couple tablespoons of the chia pudding. Divide the blueberries into same glasses or bowls. Divide the remaining coconut pudding between the dishes. Top each with raspberries. Store in the refrigerator until ready to serve. Can prepare the night before.
