Floral Fall Veggie Stew

Serves 4

Ingredients:

  • 1 medium sweet potato, cubes
  • 2/3 cup green lentils
  • 1 red onion, chopped
  • 8 brussels sprouts, halved
  • 1 parsnip, chopped
  • 2 large carrots, chopped in 1” pieces
  • 3 celery stalks, chopped
  • 1 handful of fresh cranberries
  • 5 sundried tomatoes
  • 1 small zucchini, chopped
  • 1 pear, cored and chopped
  • 1 cinnamon stick
  • 2 rosemary sprigs
  • 2 pinches of nutmeg
  • 1 tsp. dried thyme
  • 3 cups veggie broth
  • splash of olive oil
  • 1 tbs. apple cider vinegar
  • ¼ cup red wine

Place all ingredients in a slow cooker and cook on low for 7-8 hours. Serve with brown rice.
