Falafel Plate

Serves 4

Ingredients

  • 1 onion
  • 2 garlic cloves, chopped
  • 1 can chickpeas, rinsed
  • 1/4 cup cilantro, chopped
  • 1 tsp. ground cumin
  • 1/4 tsp. sea salt
  • 1/4 tsp. pepper
  • 1/4 cup chickpea flour
  • 4 tsp. extra virgin olive oil
  • 4 – 6 cups mixed greens
  • 2 cups chopped cucumber, chopped
  • 1 cup sprouts
  • 2 – 3 radishes, thinly sliced

Tahini

  • 1/4 cup olive oil
  • 3 tbsp. tahini
  • 2 tbsp. lemon juice
  • 1 tbsp. vinegar
  • 1/4 tsp. sea salt
  • 1/4 tsp. pepper

To prepare dressing whisk all ingredients together in a small bowl.  In a food processor, process onion and garlic until finely chopped.  Add chickpeas, cilantro, cumin, cayenne, salt, and pepper, pulsing until a fine paste is formed.  Transfer to a bowl and stir in flour.  Form mixture into balls using 2 tbsp each.  Should make 16. Flatten each to ½ inch thickness. In a skillet, heat ½ the oil over medium heat.  Cook falafel in batches, turning until golden on all sides, approximately 5 minutes.  Add more oil if needed.  Place greens, cucumber, sprouts and radishes on a plate.  Top with falafels.  Serve topped with dressing.
