Chicken and Arugula Salad

Serves 4

Salad Ingredients

  • 2 baked chicken breasts, cubed
  • 6 cups arugula
  • 2 cups mixed greens
  • 1/2 cup pumpkin seeds
  • 3 – 4 green onions, sliced diagonally
  • 1 red pepper, thinly sliced

Dressing

  • 1/4 cup extra virgin olive oil
  • 1/4 fresh lime juice
  • 1 tbsp. apple cider vinegar
  • 1 – 2 tsp. lime zest
  • 1 clove garlic, crushed
  • 1/4 tsp. sea salt
  • 1/4 tsp. ground cumin
  • Pinch ground cardamom

 

Combine all salad ingredients in a large bowl.  Combine all dressing ingredients in a separate small bowl, and whisk together.  Pour dressing over salad and serve.
