Bunless Buffalo Burger with Onion Chutney

Serves 4

Burger Ingredients:

  • 1 lb. wild ground buffalo meat
  • 1 tbsp. fresh sage, chopped
  • 1 tbsp. fresh rosemary, chopped
  • 1 tbsp. fresh parsley, chopped
  • 1 clove garlic, minced
  • 1 tsp. onion powder
  • Sea salt and pepper to taste
  • 2 tbsp. grapeseed oil

Onion Chutney Ingredients:

1 – 2 cups

  • 2 tbsp. grapeseed oil
  • 2 tsp. cumin seeds
  • 1 tsp. mustard seeds
  • 4 dried chillies
  • 6 cups onions, sliced
  • 2 apples, cored and sliced
  • 2 tsp. chilli powder
  • 1 tsp. sea salt
  • 1/4 lemon juice

Burger:  Mix burger ingredients in a bowl and form into 4 burger patties.  Heat grapeseed oil in a skillet on medium heat.  Cook for approximately 5-8 minutes before flipping.  Cook for an additional 5-8 minutes or until your cooking preference has been reached.

Onion Chutney:  Heat the grapeseed oil in a pan over medium heat.  Add cumin, mustard seeds, dried chillies and cook until they begin to crackle and pop.  Add onions and apple and sauté until the onions start to brown golden. Do not burn the onions.  If they are browning or burning before appearing cooked through, reduce heat.  Then add chilli powder, salt, and lemon juice bringing to a boil for one minute.

Place chutney on burger and serve with a side of steamed broccoli and asparagus.
