Broccolini Brown Rice Salad with Beans

Serves 4

Ingredients:

  • 1 cup brown rice
  • 1 large bunch of broccolini
  • 1/3 cup extra virgin olive oil
  • 1/4 cup fresh basil, minced
  • 1/8 cup fresh mint, minced
  • 1 cup organic cherry tomatoes, halved
  • 2 garlic cloves, minced
  • 1 tbsp. fresh lemon juice
  • 1/2 tsp. salt
  • 3 tbsp. cashew nuts, chopped
  • Fresh cracked pepper
  • 3 cups mixed spring lettuce, torn or chopped into small pieces

Cook brown rice according to package instructions. In a large bowl, combine olive oil, basil, mint, ½ the cherry tomatoes, garlic, lemon juice, and salt.  Mix together well and use a spatula to mash the tomatoes into the dressing mixture.

Prepare a steamer and steam broccolini for 1-2 minutes until tender but not completely soft.  Remove from heat and chop into 1” pieces.  Once rice is cooked, toss it together with the dressing, the remaining tomatoes, and broccolini.  Either mix in lettuce or serve on a bed of lettuce.  Top with cashew nuts and fresh cracked pepper
