Bean and Rice Breakfast Bowl

Serves 4

Ingredients:

  • 3 cups cooked long grain brown rice
  • 1.5 cups cooked black beans
  • 2 large avocado, diced
  • 1/2 cup raw sauerkraut
  • Sea salt, to taste

Optional Additions:

  • Baby arugula
  • Thinly sliced green onions

Divide the rice, beans, diced avocado, and raw sauerkraut equally between two bowls. Sprinkle each with a little sea salt. Add any optional additions you desire. Serve immediately.
