Avocado and Caprese Salad

Serves 4

Ingredients:

  • 4 boneless skinless chicken breast
  • sea salt and pepper
  • 2 avocados sliced into circular rings
  • 4 cups of fresh spring mix salad
  • 3 heirloom tomatoes
  • ¼ cup of fresh diced basil

Balsamic Vinaigrette

  • 1 garlic clove, minced
  • 1 tsp. of dry basil
  • 1 tbs. dijon mustard
  • 1 tbs. of lemon juice
  • ¼ cup balsamic vinegar
  • 1/3 cup of extra-virgin olive oil
  • sea salt and pepper to taste

In a large bowl, mix garlic, dry basil, dijon mustard, lemon juice, balsamic vinegar, salt and pepper. Slowly add the olive oil, whisking throughout, until there is no more oil and vinegar separation. Set aside. Heat grill to medium-high heat. Add seasoned chicken breast to grill and cook for 5-6 minutes or until there is no more pink meat. In three small salad bowls, divide the spring mix, avocado, cherry tomatoes, fresh basil and sliced grilled chicken. Serve with the balsamic vinaigrette. Enjoy.
