Apple Cinnamon Omelette

Serves 4

Steel Cut Oats Ingredients:

  • 2 tbsp. Coconut oil
  • 3 apples, halved and thinly sliced
  • 8 free-range, organic eggs
  • 1 tbsp coconut milk
  • 1 tsp. Cinnamon
  • ½ tsp nutmeg
  • ½ tsp vanilla


Heat coconut oil over medium heat in a large skillet.  Add the apple slices and coconut oil to the pan and cook for approximately 2 minutes, until soft.  While cooking, whisk eggs in a large bowl with coconut milk. Cinnamon, nutmeg and vanilla.  Remove apples from pan. Reduce heat to low and add eggs to pan. As the eggs begin to cook, add the cooked apples on top. Cover and allow to cook for 15 minutes or until cooked to desire. Remove pan from heat and cut omelet into 4.
