Apple and Cheese Omelette

Serves 4

Apple and Cheese Omelette Ingredients:

  • 2 tbsp. grapeseed oil
  • 1 apple, halved and thinly sliced
  • 8 free-range, organic eggs
  • 1/4 pound Gruyere cheese, thinly sliced or grated
  • 1 tsp. dried thyme

Optional:

  • Arugula

Heat grapeseed oil over medium heat.  Add the apple slices and cook for approximately 2 minutes, until soft.  Stir occasionally. Flip after two minutes and cook the other side for an additional 2 minutes.  Time may vary according to thickness of apple slices.  While cooking, whisk eggs in a large bowl.  Remove apples from pan. Reduce heat to low and add eggs to pan.  Immediately distribute apple slices, cheese and thyme evenly throughout omelet.  Cover and allow to cook for 15 minutes or until cooked to desire. Remove pan from heat and cut omelet into 4.  Serve over a bed of arugula or other spring greens of choice.
